Chef Erick’s Cycle Challenge

Our staff’s dedication to the students at the School of Hope never ceases to amaze us. After our Project Director Sara Miller took on the Acatenango volcano last week to raise vital funds for the school, we are thrilled to announce that Chef Erick is going to be our next challenger!
Chef Erick has been an invaluable member of the EFTC team over the last five years. Characterized by his unwavering kindness and warmth, he is well known and loved by both students and staff. During the first months of the pandemic whilst Guatemala was still under strict lockdown, Erick took on the role of Project Manager for the emergency food hamper programme. From 4:30 in the morning he was outside the school packing up his car with produce to personally deliver packages to our most vulnerable and hardest to reach families. He battled police roadblocks and carefully transported 4260 eggs along bumpy roads to ensure that no family went hungry.
Erick has truly gone the extra mile to keep our community safe during Covid, regularly checking in with all families via phone calls. Recently, he has been manning the door to the School of Hope taking everyone’s temperatures and rigorously making sure all of our safety protocols are being followed. He has been incredibly helpful and resourceful, although of course we miss seeing him in his chef’s uniform creating delicious menus and doing what he does best - sharing his love and knowledge of food with the students.
As well as being a fantastic chef, outside of work Erick’s other passion is cycling. He is an avid mountain biker who spends his weekends riding all over Guatemala. Over the years he has taken various volunteers and visitors on cycling trips to show them some of his favourite local spots. One day he hopes to be able to inspire his own children and the students at the school to share his hobby.
On February 21st Erick will be competing in a race along with three friends from his cycle group on behalf of EFTC. He hopes supporters from Guatemala and all over the world will sponsor the ride and help him to raise funds for the students at the School of Hope.
